Check the city market and see which resources they have tons of like grain or flax, etc. Then if for example the city always has lots of grain a brewery is a good choice (which uses grain to produce beer). If you want to know which type of workshop uses what resource try selecting them when you're buying one from a workshop worker.
The best indicator of what actually is profitable in a city is the trade rumors, if you see a good which is approx 1/2 the price of what it is in neighboring cities by trade rumor, you will earn far more trading in that good. I assume that the nearby villages is still a good indicator, but definitely not the best, as the macro level globalAlright So IMO I dont think you have have a decent sized army until youve learn to sustain it. For example if a city has two attached villages farming olives, an olive press might be smart, etc Fiefs are your best source of income. It could be Reyvadin, I think it is Reyvadin actually, the Northern most town. Generally dyeworks gives the largest return, but at the largest investment.
